First, you must always check the label on the bourriche. It must contain several information: the provenance and the date of packaging.
Good to know: The oyster reaches its fullness a few days after it comes out of the water.
HOW TO PREPARE YOUR OYSTERS?
Once you have chosen your bourriche, you must open them. We advise you to open them about half an hour before tasting. Bring a special knife and a tea towel to hold the oyster. Place your thumb about 1 cm from the blade, cut the muscle and lift the shell. Always empty the water from the oysters so that the mollusc produces a second, much tastier!
HOW TO PRESENT YOUR OYRES?
Regarding the presentation, it's time for your imagination! Nevertheless, be careful with ice, the cold freezes oysters and reduces their aromas. Instead, prefer a carpet of algae or coarse salt.
HOW TO TASTE YOUR OYSTERS?
We advise you to taste them raw and plain, chew them to fully enjoy all their flavors! You can optionally add a drizzle of lemon caviar or a little vinegar to the shallot. They can also be accompanied by rye bread and salted butter.
You can also decide to cook your oysters and eat them hot.
