ALL ABOUT OYSTER BREEDING

First of all, you must know that it takes an average of 2 years of breeding for a so-called "normal" oyster while it takes 4 years to produce an Ostra Regal oyster! Patience is therefore one of the main qualities of our oyster farmers!

Our production process, complex and specific, requires a lot of work before obtaining this exceptional product!

In this article we will try to list and explain the production steps of our oysters.

THE HALF-BLOADING

Our spat is selected from the best and then sent to our farm in Clew Bay, Ireland where it is worked by our teams until the half-breeding stage.

THE POUSSE IN THE RUNCH

Our oysters will then be placed on the table in our conches. A bay enclosed inland with only a small mouth that connects it to the sea and an influx of fresh water, which will allow the creation of the nutrients necessary for the proper development of oysters... We are the only ones to practice this new very complex production technique. In order to promote oyster growth, oyster farmers will regularly turn pockets, they are turned over, and change pockets. But it is also the water of the conch that will be frequently renewed. It is therefore thanks to our patience, development in a rare natural environment and our rigorous selection that our oysters become exceptional products with revolutionary flavors.

FINISHING AND SHIPPING

The oysters are then washed, sorted, calibrated, stored flat in baskets and then put on sale to finally find themselves on your plates!
